Seasoning: The original Ajinomoto (dressing), Ketchup, Mayonnaise and Sake, Mirin, Soy sauce, Olive Oil, sun dried Salt, Miso, Wasabe, Sake Lees, Shio-Koji, Shoyu-Koji. That’s all you need. All in the appropriate level. I’ve chosen good things, once I was surrounded by Iron and plastic, so now I try to use mostly wooden things.

As for the vegetables which still have a bit soil on them: Hello scrubbing brush!

There is no big cooking possible so I recommend a simple recipe. The winter was good to me: Some raw Salmon, water, Mirin, Salt, Lees, your favourite vegetables... on the appropriate amount over the fire. That’s all.

One more thing (My niece will love it!) Sprinkle Ginger: Ginger, Sake, Mirin, Soy Sauce and Honey, the appropriate level of heat to cook the Ginger, Done. Mix it with dried Bonito.

Don’t put Sugar in the Miso, but Honey... where did I hear that before?
