I was just taught its process once, so I don’t know if I made it in the proper way.
But I’m sure rice malt works harder in the fermentation to make Miso tasty.
Surely, I can live while drinking MISO soup next year too. To finish up, I put salt and sake lees on ingredients and prayed “Hope it becomes good” and closed the lid.
